Chicken Adobo

Let me see if I can get this right LOL

6-8 chicken thighs (boneless skinless)
2-3 cups apple cider vinegar
2-3 cups Soy Sauce -- I prefer the kikkomans brand chock full of sodium.
2 bay leaves
1-2 garlic cloves (chopped) or one heaping table spoon of minced garlic
10 cups of cooked rice

Feeds 6

1. Rinse off the chicken and remove as much fat as you can (I use poultry sheers)... they don't have to be perfect but if you leave all that fat on, it makes the dish way too greasy.


2. Place the chicken in a pot you have a lid for.. something that is a little taller then wider so the chicken stacks instead of spreads out.. there also needs to be room for the liquid ingredients.


3. Add apple cider vinegar and soy sauce in a 1 to 1 ratio until the chicken is completely covered.


4. Add minced garlic, or chopped garlic cloves.


5. Add bay leaves.


6. Put on hi until sauce comes to a rolling boil, then cover and let simmer for 60-90 minutes.

To plate: Take desired amount of rice then top with chicken and sauce and eat. If you like spicy food, siracha hot sauce makes a great addition to your plate.

NOW - I like my sauce a little more vinegary, so when I am done with the 1 to 1 ratio... I dump in one more cup of vinegar....I also prefer to let my chicken simmer for 90 minutes so the chicken just falls apart... Also DO NOT substitute with chicken breasts unless you like dry tough chicken that will pull your teeth out.
